headsets with USB-C connector (so you don't even need an adapter) exist
and they are not every very expensive. And if you prefer high quality
sound, a good USB-C-DAC with a good pair of headphones is the better
choice anyway.

Nope. Vastly inferior? Nope. It is simply a design choice. You like it or not. It can be important to you or not. You make a list of things that you absolutely need in a phone, another of things you would like, and then make your choice of phone amongst those on the market.
There are no absolutes; what to you maybe very important to another person is pointless.
