ImageMagick is cool. I use "convert" to create a PDF document to send
filled-in forms. Scan each page and save as a JPEG, numbered to ensure page
ordering, then:
$ convert *.jpeg my-insurance-forms.pdf
Couldn't be easier. You can do wildcards as well.

I do use a GUI, skanlite, to scan forms from our Canon LIDE flatbed scanner.
It's a bit simpler than xsane.
Both apps look pretty good, by they way.
