You're thinking of the "Reply-To" header.
 
that should be used to build the thread tree. The subject-line should
not be necessary for threading.

The way to tell is easy enough: Highlight (view) the message in Apple
Mail, choose View > Message > All Headers (or Raw Source), and look for
the "Reply-To" header.

At the source code level it is called: "In-Reply-To:"
