Because they don't have election day during the week so everyone can come vote in person. Or they'ry given a generous amount of time, like 4 hours. They also might have a larger amount of people working the polls, and who aren't subject to threats and intimidation.

And the number of voters in the US is larger than the entire populations of most other countries and the US is also larger than most other countries.  (EU = 1.634 million sq mi; USA = 3.797 million sq mi)
