 Because ballistic gel is intended to simulate flesh. Adding in cherry
 would give a bright red color but wouldn't simulate hitting an actual
 t-rex.

 
Well, that's interesting (...though I was being snarky).  But where
structural realism is intended, I'd expect some sort of skull layer.
