 I had a 120lb mixed breed Labrador/Spaniel and when I left for work,
he'd guard the house like it was Fort Knox to the point I had to put
the dining table chairs in front of the living room window, as he pull

Sorry, Ed, I'm not following you. How would moving the dining room chairs in front of the living room window stop him from pulling the curtains down.

But when I got home, he felt his work day was done and would barely
open one eye to glance at me if someone knocked while I was there,
as if to say "I'm sleeping here, you gunna get that?"

Sounds like a dedicated union man, not willing to do one small thing beyond the terms of the "contract" that he had with you, which he assumed to be guarding the house when you were out ;-)
