MIME types apply to content, not protocols. The gemini protocol can be
used to serve multiple MIME types (including e.g. image/jpeg and
audio/mp3).
The unofficial MIME type for _gemtext_ content is text/gemini. i say
'unofficial' because the 'official' list of MIME types is maintained by
the IANA; refer to:
https://www.iana.org/assignments/media-types/media-types.xhtmlfor the details.
i'm not aware of any software which serves up gemtext content using a
different MIME type, but if so, i'd be interested to know what it's
using instead (perhaps text/plain?).
