There's nothing in your header that says uft8:
 
MIME-Version: 1.0
Content-Type: text/plain; charset=US-ASCII
Content-Transfer-Encoding: 7bit

Just for comparison, here's what I see in that header...

  MIME-Version: 1.0
  Content-Type: text/plain; charset=UTF-8
  Content-Transfer-Encoding: quoted-printable
