have one because it's a completely different architecture.

When you compare NUCs to Raspberry Pi computers, you have to take into
account that Intel had a lot of competition from several retailers selling
micro computers. Raspberry Pi may have outsold Intel NUCS, they certainly
didn't outsell micro computers in general.
