There is ALFS, or Automated Linux From Scratch, which, although

LFS system.
But only a step or two up from LFS is Gentoo. ALFS does not
permit individual package configuration but Gentoo certainly
does -- and much more.
I suggested to the ALFS team to consider using using Gentoo
Portage as its automated build but received no response.
