We deal in approximates and generalisations that mostly work. "All snakes are dangerous" will get you home from school without having to worry about separation of species.
Our models get more sophisticated, but they don't stop being models for all that.
WE create a world full of 'categories' and 'types' and 'forms' to represent the real world, approximately.
The real idiots are the people who confuse these models with reality itself.
