Have you tried alpine for email? It is terminal based, but a very powerful piece of software!

Fedora 40 to Fedora 41 ran unintended with no problems and it didn't break
my Python projects.

This is the truth! I am always afraid that upgrades will give me problems for some reason, but I have never experienced this. Maybe it is because as I've gotten older, I tinker and customize less, and perhaps that is why upgrades now run very smooth.
A for gnome, maybe try xfce? I find it a nice balance of batteries included and light resource use.
