Indeed, in GTA3 it actually makes a big difference. The final fight is a
lot easier if you have an assault rifle and a rocket launcher and have
stashed a bullet proof car in your garage too. Now I have to admit I
don't remember if I did the pickups when I played the remakes last
year. GTA3 possibly yes, Vice City and San Andreas likely no.

If I recall correctly, GTA3 and Vice City you had to find the kewpie
dolls, San Andreas you just had to get the item to have it spawn, so
you'd do a 4 alarm run to get the gatling and such to have it for ever.

Been a while though.
