Yeah it's not exactly casual to get anything going because you have to turn off the anti cheat.

While it's a good idea to make a backup, The souls games have 10 character slots, so you just start a new game, make a character and name it.  When you want to switch, choose load game instead of continue and choose the character you want to play.
