Le chou produit des substances pour détruire ses parasites (des pesticides "naturels" donc). La publication donne la liste des pesticides "naturels" du chou (*).Ces substances sont toxiques pour les autres être vivants, humains inclus. D'après la publication de Bruce Ames, 99,99 % des pesticides ingérés par les humains sont d'origine naturelle. Cela représente environ 1,5 g de pesticides "naturels" par personne et par jour.
