An email program can access Gmail via SMTP.  I did this years ago, and
messages can be left on their server, or they can be removed.
 
I have no complaints with Gmail's service.  I use ad blockers on the
browser used, so I don't know if ads exist there these days.

I access my (several) Gmail accounts with Apple Mail.app using IMAP.
It works well for me and integrates with other Apple MacOS programs.
What little spam I do get is already parked in the junk mailbox ready
for deletion. 

I hardly ever see ads at all; that's probably because of the ad-blocking
DNS function of my VPN provider, PIA.  I don't run ad-blockers in my
web browsers either.
