What do I need to do to de-register it from her while I'm still visiting?
Just doing a simple factory reset may be enough, but having old devices cluttering up her account could cause issues later on - for example, there is a limit to how many devices an account can have for some features.

You may also need to log in to her Apple ID account and remove the iPhone from the devices list, as per the final step.
After that, you'll need to create your own free Apple ID, if you haven't already got one, as part of the resetted iPhone's set-up process.
