  I am fairly certain the iOS version of Gmail is better than the Android
version of Gmail.  I tried to use it on someone's phone and it seemed
to be very different.  Maybe it was a newer version or maybe it was set
up differently.

Are you sure you were comparing (if you'll forgive the pun)...
...apples to apples?
That is, are you comparing an app for Gmail on iOS ("Gmail - Email by Google") to the same app on Android, or are looking at a different app that comes bundled with Android
