I'd like to help you out but I'm hindered by having never used RCS (since it does nothing useful to me) but maybe I can run an RCS test for you?
I have a variety of iPads and an iPhone 6 (but no SIM card) in front of me.
Of course my daily drive is the free T-Mobile Galaxy A32-5G which has the the last known good version of PulseSMS set up as my default messenger app.
PulseSMS doesn't support RCS but I could probably load any non-Google messenger app that has RCS support (they should start existing soon).
Do you know if it's possible for me to test your scenario with those tools?

Let me know if you can think of a test I can do for you. I also have family members with the latest iPhone 16 (yes, I still buy Apple products) whom I can ask also to send me messages - but they're busy with life & kids too.
Let me know if there's a test you can propose that I can do for you.
I do tests for people all the time on Windows & Android so why not iOS.
