That is technically impossible without creating a new mail with any mail
client. You have to direct it to the person you want it forward to. How
would you do that without creating a new mail? You can send it inline or
as attachment. For your purpose send the source-text.
Things are different if you are able initate the forwarding on the
mail-server directly.

2. How come some e-mails are not AirPrintable? There's no print option.
This is noticeable with the university's Office 365 e-mail account.

No idea. I'm not familiar with the setup of the university office.
Print it from your Mac.
