Thanks for posting this. I do both bikes and guitars (neither as deeply as you), but I have noticed some of the commonness of process.
I have a pretty good ear, although not enough that I would trust it for fine-tuning a wheel.
I do remember trying to do that many years ago. I did adjust a wheel on a Schwinn StingRay, where I adjusted it by ear. I had no experience with doing wheels then, and I'm sure it was a machine-built wheel. I don't remember the results, but I don't think the wheel was any better than when I started.
