Since I deal in high end archtop acoustic guitars this thought occurred to me. I repair guitar and bikes and service them while they are different some things are quite interrelated.
Thanks for posting this. I do both bikes and guitars (neither as deeply as you), but I have noticed some of the commonness of process.
I have a pretty good ear, although not enough that I would trust it for fine-tuning a wheel.
I do remember trying to do that many years ago. I did adjust a wheel on a Schwinn StingRay, where I adjusted it by ear. I had no experience with doing wheels then, and I'm sure it was a machine-built wheel. I don't remember the results, but I don't think the wheel was any better than when I started.

My next project is for myself. I need to refret by 1938 Gibson L5. It is a complete winner sound-wise and in nice shape. The frets are not really worn as such but just down to the fretless wonder stage. I like big frets and it would make for much easier play. I have to take my time on this and get frets all seated nicely. The truss rod works which is a plus sometimes they can have issues.
