So while 26inch bikes are hard to find sold, though are used by trikes and
so on, is still some some choice out there,

I don't see any shortage of 26 inch tires online:
<https://bicyclewarehouse.com/collections/26-inch-bike-tires>
Their catalog shows 210 tires in 26 inch including 130 tires under
$50:

Is 26 inch hard to find only in retail?

I said 26 inch bikes rather than tyres or at least new models.

For example neither Maxxis Assegai which has been around for quite a while
now, decade maybe? But no 26inch versions, which seems to be the same
across all manufacturers ie they have kept the 26inch versions of older
models of tyres though often with a reduced choice, Magic Mary for example
for 26inch you have no or limited choices with each discipline ie
Trail, gravity, bike park have one tyre, 26 * 2.35 no choice of compounds or
sidewall colours, Downhill still gets no choice regarding compound but has
two width options. So 5 tyres in total.

I recently bought a Magic Mary for my Trance which is a 29er, of which
there are 15 tyres which cover three width options, five carcass options
and three compound options.

Essentially it’s a slowly reducing field, particularly if your going to be
using the MTB as intended, where your options will be less so would need to
be happy with the choice  or rather lack of any choice really from each
manufacturer.

At the leisure or utility end which is what I use my old 26incher for it
doesn’t matter, but it would for the trail bike I own, like most MTBers I
care about tyres which have huge impact much more so than any other type of
bike.
