Jeez, why would anybody do that? I use cast iron cookware all the
time. Spinach/gruyere frittata perking in an iron pot as I write. I
never saw that done before either.

Perhaps they were someone's experiment for cooking high volume items too delicate to shove a spatula under in a limited space, like a lunch wagon. Fried eggs 'over easy' aren't pretty after I've tried to flip them.
