De-fat the gravy, what do you mean? After roux/milk, I normally just whisk in pan/meat drippings and simmer to a good consistency.
Is that even legal? I thought post roast had to be served with mashed potatoes.
I love it with cubed roasted red potatoes, to take on the meat flavor, but to each their own.
