It's also important to use decent oil.  Not vegetable (soy), nor Canola.   Those two are shitty, and shouldn't be in any decent kitchen.

Thanks.  I usually fry in peanut or corn oil.  I don't have any kind of canola or "salad oil" in my kitchen.  I'm not opposed to sunflower oil, but the price is enough to knock you over.  I'm usually happy with peanut oil.
