Well, my opinion of cooked carrots is right up there
with turnips and Brussel sprouts. I did taste one of
the parsnips I was cutting up and it had the distinct
flavor of a woody carrot. Nonetheless, the quartered
'snips are roasting in the toaster oven at 425°F and
have about another 15 minutes to go.
They got spritzed with oil and seasoned with salt.
I took them out about half way through to give them
a shake and another spritz of oil.
