It's very hot here. We have a tropical storm (Debby) headed this way. It is supposed to strengthen into a hurricane, albeit a minor one, overnight as it makes landfall over coastal Georgia. High winds and heavy rain predicted. It's already been raining a bit here.
I'm going be "grilling" a couple of yellow squash and zucchini, split lengthwise, on the stovetop grill pan. Brushed with oil and seasoned with S&P and sprinkled with a little grated Parmesan, cooked until nicely browned and tender. Earlier today I made another batch of barley pilaf. Very easy. 1/2 c. pearled barley combined in a casserole dish with minced onion, garlic, a little pepper, celery salt, chopped parsley and 2 c. beef broth (you may use chicken or vegetable broth/stock), covered and baked in a 325F oven for an hour until the liquid is absorbed.
