 I know enough Italians to know that a hell of a lot of them eat that cheap green can crap. Some buy the bags of pre ground Parmesan. Not many grate it fresh. They also use commercial pasta sauces.
  

Going to my son's house tomorrow.  He will start the sauce in the morning using my wife's method that she learned from her Italian grandmother.  Imported aged Parmesan cheese will be grated at the table.
