Chuckle, Thursday is the mark down day here.  Sadly, they stopped
selling lamb shoulder steaks.  I loved them long braised in curry
gravy.  Fork tender!
 
I have not seen lamb shoulder chops for years. We ate them for years
as a more affordable lamb dish. I liked them well enough but when I
started getting loin chops more often my  preferences changed and I
was willing to pay more for a far superior cut.  I had a sort of
braised shoulder chop dish in a restaurant in Paris about 20 years
ago.  We had been wandering through Denmark, Germany, Netherlands,
Belgium and France and had all kinds of great meals.  Those chops
were major disappointment. They had been cooked in a with potatoes
and cream, so I guess it would be a sort of scalloped potato and lamb
casserole.

I had lamb in OZ and I loved it.  When we came back stateside, I found
it at HT.  It lasted 3-4 years and was a popular cut.  Then they
swapped and all you could get was the 9$ and up a lb stuff (average is
15$ a lb).  They now carry very little lamb because turnover is really
slow and waste is high.  I miss that shoulder cut.

Sad when a meal out misses the beat on the main dish.


The shame of it is that the rest of the meal had been so good.  The
appetizers and desserts were outstanding. It was ironic that they
could have such good starters and finishers and such a disappointing
entree. My wife and I had been torn about the appetizers. It was a
toss up between a chicken terrine and liver pate. We agreed to each
order one and to share them.  That was a wise move because we were
then honour bound to share. They were so good that without that deal
neither of us would have wanted to share.  Sure, we could have a
taste of each others, but the deal was to share them equally. I
didn't really want to give up half my pate, but I have to say that
her terrine was equally good.

Sounds interesting!  I never got to Europe in my travels and now it's
really too late to enjoy it due to spinal isses.
