Years ago, there was a little shop near us which sold freshly-ground
peanut butter. You'd select your peanuts, have them weighed up, and
they'd be ground right in front of you.

I think that's all you need. I buy peanut butter from ALDI.
Ingredients: roasted peanuts and salt. Not organic, not expensive,
from humble ALDI. Why is it so much harder for Americans to get
something decent?

It's not difficult.  There are numerous brands of natural peanut
butter.

Can you name a few generally available brands?

Sure, if googling for "natural peanut butter" means "generally
available":

Smucker's Creamy Natural
Crazy Richard's Creamy Natural
Santa Cruz Organic Dark Roasted Creamy

And some store brands:

Whole Foods 365
Kirkland Signature Organic

The words "peanut butter" have been elided from the product names
because I'm a lazy typist.

I don't eat very much peanut butter, just a few times per year.  I
buy Jif, just as my mother did.
