The guacamole that's served here features the avocado as the
main flavor component. That's silly since avocado doesn't taste like
much. My guacamole would be garlicky, spicy, salty, with a heavy hit of
umami. It would have a little sugar in it, of course. It would not be a
boring gringo guack.
Gringo what?  If you asked a Mexican, you'd be considered a gringo.
Guacamole only requires avocados, onion, salt, jalapenos, cilantro and lime juice.
