I didn't end up battering the cod. It was moist enough that just dredging it a few times almost made a batter. The poblanos with cheese were perfect. Thanks to Steve W for suggesting using sodium citrate.

Our son, who lives next door is ill, so I made him fish, but also rotini with cheese sauce (mac&cheese), also using the sodium citrate.

So it is a crap fish from the farms of South America instead of Asia. Yeah, old fish from Aldi is something to brag about.
