Here's one of my own. Not from a recipe book.
xxcarol's Sausage blend
2 ts salt
2 ts anise seed
1 ts black pepper
1 ys oregano
1 ts ginger
1 ts thyme
1 ts garlic powder
1/2 ts onion powder
1/2 ts (heaping) Hungarian hot paprika
Optional 1/2 ts Fenugreek
I make it in larger batches (tsp becomes TB) and keep it in a jar with
the recipe written on it.
While intended to mix with raw pork to make patties or balls, it works
with other meats like ground chicken, turkey, or beef.
Simple recipe is to make chicken gravy (I use a bulk powder for it) and
add chicken sausage then cook together and serve over eggnoodles.
