Umm, Carol, I was reacting to your reply to David (dsi1) and his
comments about cast iron. He sounds about as ill educated about
heat conduction and multi-faceted uses of cast iron as Sheldon.
I had not bothered to engage him on that. There are things I like
about cast iron. Among them are being able to get them smoking hot
that they retain heat. They don't suddenly cool off when you through
a slab of meat in. The cast iron is my pan of choice for pancakes.
Yes and some of my recipes are designed to use that residual heat.
