I don't want to start the great fruit cake love it or hate it debate all over again. I just want to say that I just put the first batch of my light fruit cake into the oven. It is a lot of work and lot of expense but I have several friends and relatives who look forward to it every year. It took me an hour to get the ingredients whipped up and ready to go into the pans. Stirring the dredged glazed fruits into that heavy batter is a decent workout.
Is the batter too heavy to mix in a nice stand mixer? I hated making whipped cream and icings before I was gifted a new Kitchen-aid mixer.
