Yes a cast iron skillet for fajitas makes good sense because it
keeps them sizzling hot for longer than a standard plate would.

them warm, and not a skillet out of the oven. Out of the oven sounds
like way too much heat.

If flat breads are being done, they are stove top.But that is NOT what you claimed, is it?
