🧁 Mini Custard Cakes
Ingredients:
Puff pastry - 2 sheets
Yolk 1pc
For the cream:
Milk 225 ml
Eggs 1 pc.
Sugar 75 g
Corn starch 20g
Butter 25g
Zest of 1 lemon
Cut the dough as in the video, brush with yolk and bake for 20-26
minutes at 180 C.
Prepare the cream:
Bring the milk almost to a boil.
Separately mix the egg, salt and sugar.
Add lemon zest, mix, then add starch and mix everything until smooth.
Pour in some hot milk and stir again to prevent the eggs from
curdling.
Put the second part of milk on the fire again and pour our mass into
it, stirring constantly. Cook the cream until it thickens and stir constantly so that it does
not burn.
As soon as the cream has thickened, remove from heat, add butter, stir
and cover with film directly on the surface of the cream. Let it cool, put it in a pastry syringe and decorate the cake (after
removing part of the core of the dough from the puff pastry)
