I was going to cook a piece of pork belly yesterday, braising it as I thought that it was skinless, as most pork here is. However, it turned out to have skin so I roasted it following a BBC recipe. The crackling was great but the meat was heavily overdone, possibly because it was a
2'' wide strip.
