Very interesting! Why do you add crushed ice?
Add seasonings and work in well, second grind worked here as first
grind was 'fat disc' so used medium disc after mixing pretty well with
spice list.

1 1/2 tablespoons salt
1/4 cup dried milk powder
1 1/2 teaspoons freshly ground white pepper
3/4 teaspoon freshly ground black pepper
1 teaspoon ground mace (can substitute nutmeg but strongly recommend

These can go in casings and traditionally are but I skipped that and
instead flattened it out then made strips and pinched off enough to
make balls.
