The guacamole that's served here features the avocado as the
main flavor component. That's silly since avocado doesn't taste like
much. My guacamole would be garlicky, spicy, salty, with a heavy hit of
umami. It would have a little sugar in it, of course. It would not be a
boring gringo guack.
That would be some sort of salsa, not guacamole.
Yeah, and I didn't write that description, dsi1 did.
My profound apologies. I deleted too much and got dsi1's attribution.
I don't much care for guacamole (or salsa). I do like a nice ripe
avocado just for eating sometimes.
My problem is I can't find nice, ripe avocados; when I want one,
I want to eat it today or tomorrow, not three or four days hence.
If I'm going to eat all that fat, it had better be worth it.
I don't just eat them, though. Usually in a salad along with
shrimp, jalapeno, cucumber, tomatoes, cilantro, scallions, and
lettuce. Dressed with lime juice and EVOO.
Sometimes on a sandwich.
