Years ago, there was a little shop near us which sold freshly-ground peanut butter. You'd select your peanuts, have them weighed up, and they'd be ground right in front of you.
The huge "Market District" Giant Eagle grocery store near Pittsburgh has a machine to grind freshly roasted peanuts on the spot into peanut butter. I've never tried it, but have been meaning to.

That makes the stirring--which is a chore--not so bad.
