  sometimes it is just because more options adds more
complications and time and storage requirements.  it's
not always about the simple cost of materials it can
instead be about time and complexity for staff and that
means every time you hire someone new you have to spend
time telling them where things are and what to do.  in
the food industry staff turnover is a huge issue.

  don't you think that such considerations should be
obvious?
