I love capers.  I'd rather have mayo and pickles than the
crap in the jar.

Sure, I'd love proper homemade tartar sauce (or gribiche),
but I only eat it on fried fish and I don't fry fish at
home.

I grill fish at home and eat it with nothing on it but salt
and perhaps pepper.  Leftovers get lemon vinaigrette on a salad.
