I almost bought a (raw) lobster tail when I was at the meat market today. I love lobster but I don't love the price. I do know how to prep a lobster tail for broiling or grilling. Cut the underside off using kitchen shears then bend the tail shell backwards until it cracks. This is to prevent curling when you cook it.
We stopped at the corner bakery for a quick lunch and we talked about picking up a couple desserts for tonight. I had a brain wave. She confirmed that we had a can of pineapple rings in the pantry so I decided to make a pineapple upside down cake. I haven't had one in years.
I don't think I've ever tasted a pineapple upside down cake. Enjoy!
