We stopped at the corner bakery for a quick lunch and we talked about
picking up a couple desserts for tonight. I had a brain wave. She
confirmed that we had a can of pineapple rings in the pantry so I
decided to make a pineapple upside down cake. I haven't had one in years.
I love pineapple upside down cake. I wish my bakery made it. It
would be pointless for me to make one; I'd have to eat it all myself.
(I bet it would freeze well, though.)
I buy this frozen. One minute in the MW, let stand 2 minutes and on the plate. Handy to have, nice size for a snack.
