 We had pizza because I had have a ball of cheese and half a jar of sauce leftover from the last one. I got an early start on the dough and stuck in into the oven with the light on for a while and had planned to take it out after about an hour and put it in the fridge. I forgot. When I remembered to take it out it had already risen way too much.  I pushed it down and stuck it in the fridge for a couple hours longer.  When I took it out of the fridge  and started forming thee crust it had a nice texture. The pizza turned out really nicely. I guess when I fell I landed on my feet.
 

Punching down the dough again and refrigerating it obviously helped. Glad it worked out for you. :)  I am not really a fan of pizza.  Yes, I've made pizza dough from scratch (both thin and thick crust) but it's not something I want to eat very often.
