Good thing I had a hefty breakfast this morning. We had some back bacon, peameal, a fried egg and some buttermilk pancakes.   My wife is intrigued by this pancake mix. She wondered how much oil and egg it needs. None. Just add some water, about 4 parts mix to 3 parts water. They are surprisingly good.

I put blueberries in it.  Had the las of the last batch this morning.
I make a batch and get 16 to 18 pancakes from it.  For each meal, i use 4, five if I have it and two pieces of bacon.  I make the bacon in the oven along with the first batch so I'm set for the next 7 to 8 days as I alternate with eggs.
