I suspect that our "fresh" salad shrimp is from frozen. I can't imagine
peeling those little buggers by hand. There must be a process?

It's not very difficult to find peeled, *uncooked* shrimp in a 1 lb. package.  In many ways this is better than the pink cooked shrimp because they often get overcooked.
