  My son managed a few bars and staff turnover was a major problem.  He was forever firing servers, most often for theft.

I had a fun time working for a restaurant for a year back in the 90's. Part of my job was to handle the accounting.  Back of the house stuff, including payroll.  The general manager was re-assigned to a different restaurant and the new GM changed the computer password and wouldn't tell me what it was.  I complained to the regional manager (RM).  He blew off my concerns.  Perhaps he was complicit?  Turns out, the new GM added a bunch of his family members to the payroll system and was forging work hours for them and having weekly paychecks cut for them. He was eventually caught.  I no longer worked there but I did get to say to the RM, "I told you so." :)
